La Abuela Mexican Foods, a company that started in Weslaco from Ms. Cristina Ardila's traditional recipe, is undergoing a major expansion. Ms. Ardila, the brand's president, first started making her "ready to cook" tortillas for her children, then neighbors and friends, and has since grown her labor of love into a beloved business.
To meet growing demand, the company is kicking off a new project to add 6,200 square feet to its "Plant B" facility, which will house a new production line.
Work began yesterday, November 10, 2025, and is expected to be completed by February 27, 2026.
